Wine-making process

Ageing in barrels

Barricas

Bodegas Pascual has been letting the wine stand inside the stainsteel vats and then it is transported to new barrels. We use French and American oak barrels, 50% is French oak and the 50% left is American oak.

The ageing in barrels process is taken place in our ageing room between the dark, the silence and the chill out atmosphere that all the fine wines require. This process ranges between 10 months in oak for our Selectionned Vineyard Wine - Vendimia Seleccionada (Buró Selección), 14 months in oak for our Oaked -Crianza- Wines, 18 months for our Limited EditionVino de Autor- Wine (Diodoro Autor) and 24 months in oak for our Oaked -Reserva- Wines.

Racking is made in barrels every 6 months and also filling them up with wine of the same quality every month or every month and a half. The aim is trying to achieve perfect balance between wine and wood. Wood is wise and provides the wine great part of its potential.
